El mismo estaba conformado por dos secciones: zona sucia y zona limpia.<\/span><\/p>\n<p><span style=\"font-weight: 400\">En el dise\u00f1o del Aulario del \u00c1rea Salud, establecida en el Edificio Polivalente Parque Batlle (EPPB) se ubica el laboratorio desde el a\u00f1o 2021 en el segundo m\u00f3dulo del EPPB, en un espacio m\u00e1s amplio, contando con zona limpia y zona sucia contiguas, separadas y diferenciadas. El dise\u00f1o est\u00e1 adaptado a las necesidades, el tama\u00f1o, los materiales y la infraestructura compatibles con las actividades del laboratorio, permiten un correcto flujo de trabajo, y el desarrollo de actividades de docencia, investigaci\u00f3n y extensi\u00f3n dentro del mismo. Se ha equipado mobiliario en los laboratorios mediante proyectos de PCETMALUR.<\/span><\/p>\n\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t<div class=\"sow-tabs-panel\">\n\t\t\t<div\n\t\t\t\tclass=\"sow-tabs-panel-content\"\n\t\t\t\trole=\"tabpanel\"\n\t\t\t\taria-hidden=\"true\"\n\t\t\t>\n\t\t\t\t<p><span style=\"font-weight: 400\">Contribuir a la formaci\u00f3n de profesionales del \u00e1rea de la nutrici\u00f3n humana y f<\/span><span style=\"font-weight: 400\">ortalecer los procesos de ense\u00f1anza, investigaci\u00f3n y extensi\u00f3n vinculados a la microbiolog\u00eda de los alimentos, desarrollando habilidades y destrezas en an\u00e1lisis microbiol\u00f3gicos.<\/span><\/p>\n\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t<div class=\"sow-tabs-panel\">\n\t\t\t<div\n\t\t\t\tclass=\"sow-tabs-panel-content\"\n\t\t\t\trole=\"tabpanel\"\n\t\t\t\taria-hidden=\"false\"\n\t\t\t>\n\t\t\t\t<p><span style=\"font-weight: 400\">Grado:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Pr\u00e1cticos en la unidad curricular Microbiolog\u00eda Alimentaria: aplicar protocolos de buenas pr\u00e1cticas en el laboratorio, toma de muestras, y otras.\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Optativas planificadas en el marco del Plan de Estudio 2014.\u00a0<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400\">Educaci\u00f3n Permanente:\u00a0<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Curso de vida \u00fatil de alimentos.\u00a0\u00a0<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Curso de Procedimientos Operativos Estandarizados de Saneamiento (POES)<\/span><\/li>\n<\/ul>\n\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t<div class=\"sow-tabs-panel\">\n\t\t\t<div\n\t\t\t\tclass=\"sow-tabs-panel-content\"\n\t\t\t\trole=\"tabpanel\"\n\t\t\t\taria-hidden=\"true\"\n\t\t\t>\n\t\t\t\t<p><span style=\"font-weight: 400\">Desarrollo de un alimento fermentado con productos de consumo tradicional en Uruguay (2020).\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400\">Proyecto ganado en el llamado Programa de Fortalecimiento del Equipamiento de Investigaci\u00f3n en los Servicios de la UdelaR (CSIC): se obtiene un Autoclave por Res. N\u00b0 7 CSIC del 8 de julio del 2021<\/span><\/p>\n<p><span style=\"font-weight: 400\">Esta l\u00ednea articula con los laboratorios de Microbiolog\u00eda Alimentaria, Alimentos Modificados y Desarrollo de Productos,\u00a0 el de An\u00e1lisis Fisicoqu\u00edmico de alimentos y el de Laboratorio Experimental de Alimentos.<\/span><\/p>\n\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t<div class=\"sow-tabs-panel\">\n\t\t\t<div\n\t\t\t\tclass=\"sow-tabs-panel-content\"\n\t\t\t\trole=\"tabpanel\"\n\t\t\t\taria-hidden=\"true\"\n\t\t\t>\n\t\t\t\t<p><span style=\"font-weight: 400\">Extensi\u00f3n &#8211; Alimentos en acci\u00f3n: Experimentado con frutas y Hortalizas desde la Microbiolog\u00eda la Qu\u00edmica y la Nutrici\u00f3n 2022<\/span><\/p>\n\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t<div class=\"sow-tabs-panel\">\n\t\t\t<div\n\t\t\t\tclass=\"sow-tabs-panel-content\"\n\t\t\t\trole=\"tabpanel\"\n\t\t\t\taria-hidden=\"true\"\n\t\t\t>\n\t\t\t\t<p><b>Capacidad anal\u00edtica actual\u00a0<\/b><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400\">En relaci\u00f3n a las l\u00edneas de investigaci\u00f3n actualmente se trabaja en las siguientes \u00e1reas:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">An\u00e1lisis de aguas: control de la calidad de agua corriente y de dispensadores de agua de consumo en EPPB y Piso 13 del HC.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Alimentos fermentados: control de higiene en la elaboraci\u00f3n.<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400\">Tambi\u00e9n se realizan actividades en el marco de Proventos:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">An\u00e1lisis de alimentos, superficies y ambiente para el Departamento de Alimentos del Centro Nacional de Quemados (CENAQUE) del HC.<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><b>Capacidad anal\u00edtica proyectada<\/b><\/p>\n<p><span style=\"font-weight: 400\">Se proyecta ampliar las l\u00edneas de investigaci\u00f3n actuales:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">An\u00e1lisis de aguas: aceptabilidad microbiol\u00f3gica del agua de consumo, incorporando an\u00e1lisis de <\/span><i><span style=\"font-weight: 400\">Pseudomonas aeruginosa<\/span><\/i><span style=\"font-weight: 400\">.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Alimentos fermentados: b\u00fasqueda de microorganismos pat\u00f3genos como ser <\/span><i><span style=\"font-weight: 400\">Salmonella <\/span><\/i><span style=\"font-weight: 400\">spp., <\/span><i><span style=\"font-weight: 400\">Listeria <\/span><\/i><span style=\"font-weight: 400\">spp., <\/span><i><span style=\"font-weight: 400\">Staphylococcus aureus <\/span><\/i><span style=\"font-weight: 400\">y recuento de bacterias potencialmente beneficiosas para la salud (bacterias \u00e1cido l\u00e1cticas).<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400\">Se plantean nuevas l\u00edneas de investigaci\u00f3n en relaci\u00f3n a:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">B\u00fasqueda e identificaci\u00f3n preliminar de hongos potencialmente toxig\u00e9nicos en alimentos.<\/span><\/li>\n<li style=\"font-weight: 400\"><span style=\"font-weight: 400\">Control de inocuidad de productos elaborados en servicios alimentarios del EPPB (asesoramiento).<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><b>Actualmente se cuenta con los siguientes equipos en funcionamiento:<\/b><b><br \/>\n<\/b><\/p>\n<ul>\n<li 400\">Termohigr\u00f3metro<\/span><\/li>\n<\/ul>\n\t\t\t<\/div>\n\t\t<\/div>\n\t\t\t<div el desarrollo y realizar otras actividades que potencien la formaci\u00f3n de estudiantes y egresados.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400\">Consolidar una pol\u00edtica de puertas abiertas que articule con los otros laboratorios dentro y fuera de la instituci\u00f3n.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Continuar con Proventos articulando con diferentes departamentos de la Escuela de
